Recipe: Fruit & Nut Fish

Yesterday I decided to experiment while making dinner, and I came up with something that isn't at all French (to my knowledge), but turned out pretty yummy (if I do say so myself). I had my basic ingredients (some pretty bland whitefish, coconut milk, curry powder) and the rest just came together as I cooked. Try it out if you want ... it's tasty!

This isn't a real recipe, so if you want to make it, just estimate the quantities, as I did.

  • Saute some onions and garlic in olive oil.
  • Add the fish, and sear it on both sides.
  • Add some vegetable broth, turn down the heat and cover for a few minutes.
  • While it's cooking, open the can of coconut milk and stir in however much curry powder you want (I transferred it to another container to mix it up, which I think is easier than trying to mix it in the can.)
  • Pour the coconut milk / curry into the pan and stir.
  • Add some spinach leaves, chopped dried fruit (I used dates) and nuts (I used sliced almonds).
  • Stir everything up, add salt and pepper to taste, and let simmer for a little while. (The fish will probably flake apart, and that's OK.)
  • Thicken with a little flour and water if you want.
  • Serve over couscous or rice.
  • Enjoy!!
