This isn't a real recipe, so if you want to make it, just estimate the quantities, as I did.
- Saute some onions and garlic in olive oil.
- Add the fish, and sear it on both sides.
- Add some vegetable broth, turn down the heat and cover for a few minutes.
- While it's cooking, open the can of coconut milk and stir in however much curry powder you want (I transferred it to another container to mix it up, which I think is easier than trying to mix it in the can.)
- Pour the coconut milk / curry into the pan and stir.
- Add some spinach leaves, chopped dried fruit (I used dates) and nuts (I used sliced almonds).
- Stir everything up, add salt and pepper to taste, and let simmer for a little while. (The fish will probably flake apart, and that's OK.)
- Thicken with a little flour and water if you want.
- Serve over couscous or rice.
